Kashmiri dum aloo is one of the most widely preferred north Indian curries. Midium sized potatoes are shallow fried and then cooked in delicious gravy of onion, tomato, cashew nuts, curd and lots of spices like kashmiri red chilis power, cloves, cinnamon, green cardamom, cumin seeds, coriander powder, ginger, garlic etc.
Ingredients for Kashmiri Dum Aloo:-
Potatoes : 8 boiled (medium size)
Onions : 2 Sliced
Tomatoes : 3 Chopped
Ginger/Garlic Paste : 1 Tsp
Cashew Nuts : 15
Green Cardamom : 4
Cloves : 4
Cinnamon Sticks : 2 Pieces
Red Chili Powder : 1 Tsp
Coriander Powder : 1 Tsp
Turmeric Powder : ½ Tsp
Garam Masala Powder : ½ Tsp
Kasuri Methi : 1 Tsp
Curd : ½ Cup
Salt : As per taste
Oil : 3 Tbs
Water : As Required
Onions : 2 Sliced

Method for Kashmiri Dum Aloo:-
Boil and peel the potatoes and poke them all over with the help of a fork. Heat 2tbs oil in a kadhai and add some salt and turmeric powder.Now, add red chili powder and potatoes. Shallow fry them for 5 minutes then take them out and keep aside. In the rest of oil add few cardamoms.
Then, add cloves and cinnamon. Add onion and sauté for 1 minute, now add ginger garlic paste.
Sauté it till the raw smell is gone. Now, add tomatoes and cashew nuts. Again sauté them and turn off the flame.
When mixture is cool, grind it and make fine paste of it. Now, heat 1 tbs oil in a pan and add cumin seeds. When it crackles, add the grinded masala paste.
Sauté this mixture for about 3 minutes. Now, add all spices and stir it continuously till the oil separates. Then, add the curd.
After that, add water as required, 8 boiled potatoes and salt as per your taste.
Mix it well and cover it. Now, cook it for 15 minutes while keep stirring in between. Now, add some kasuri methi. At last, garnish the Kashmiri Dum Aloo with coriander leaves. Serve it hot with some rice or chapatti.
